Feta & Beetroot Salad

 

 Serves 4 

 

• 1 cup crumbled feta

• 1 cup diced beetroot

• 1 bag mixed salad leaves

• 2 tbsp. caramelised balsamic vinegar

 

Combine first 3 ingredients, season with sea salt and pepper, then drizzle with the fourth ... Super easy, yet still sensational (just how we like our salads)!

 

Beetroot: If using tinned beetroot, place contents of the opened can in an airtight container and fill with a mixture of water and white vinegar. Refrigerate until needed, this helps keep beetroot fresh.
