Marinated & Baked Olives

Serves 6

  • 500g green olives, pitted
  • 1 lemon
  • 2 sprigs rosemary, chopped
  • 2 cloves garlic, thinly sliced

Preheat oven to 180C / 350F. Place olives in a baking dish and with a rolling pin, gently push down to skin splits. Onto the olives, grate the zest of a lemon then add rosemary and garlic. Cook for 10 minutes, toss and cook for a further 5 minutes. Serve warm.

Optional: Add 1 tbsp. olive oil to the mix.
