- 3 eggwhites
- 1 cup (200g) caster sugar
- 1 cup (100g) pecan nuts, chopped
- 22 Ritz crackers, crushed
Beat eggwhites until stiff, gently adding caster sugar throughout. Fold in chopped pecan nuts and crushed crackers. Pour mixture into a pie dish and bake in a preheated 180C oven for 25 minutes.
Optional: Add a dash of vanilla essence. Slice as you would a cheesecake and top with a dollop of whipped cream and piece of seasonal fruit.
