Seared Thai Salmon

Serves 2

  • 1 tbs. macadamia nut oil
  • 2 salmon steaks
  • 1-2 tbs. Thai red curry paste

Rub curry paste over the salmon. Heat oil in a non-stick frying pan and cook the salmon for 4-5 minutes each side, turning only once, until cooked through.
Optional: This is delicious served with Ginger & Broccoli Sautéed Salad (see Salads).
