- 2½ cups desiccated coconut or shredded to roll
- 400g dried apricots finely chopped
- 400g can condensed milk
- Measure out ½ cup coconut and side aside on a wide, flat plate.
- Place the remaining coconut in a bowl and stir in the apricots and condensed milk.
- With wet hands, roll 2 teaspoons of mixture into a 'Apricot Bomb' and roll into the reserved coconut.
- Refrigerate or freeze for a later date.
