Banana Bread
Serves 8 people
Ingredients
- 2 large Bananas (really ripe)
- 1/2 cup caster sugar
- 1 cup Whole egg mayonnaise
- 2 cups self-raising flour
Instructions
- Preheat oven to 180C
- Line a 23 x 13 cm loaf tin with baking paper
- In a medium bowl, mash the bananas
- Stir in the sugar
- Add the mayonnaise, flour and a pinch of sea salt and lightly mix, just until combined
- Using a spatula, scrape the mixture into the tin and bake until a skewer inserted into the center comes out clean, 45 minutes
- Let cool in the pan for 10 minutes, then turn onto a rack
- Enjoy it warm straight away or lightly grilled
Recipe Notes
Optional: Before baking sprinkle with ground spices, eg. cinnamon and nutmeg. In addition to adding flavour, spices also add health benefits too.
