Banana Bread

Serves 8 people


  • 2 large Bananas (really ripe)
  • 1/2 cup caster sugar
  • 1 cup Whole egg mayonnaise
  • 2 cups self-raising flour


  • Preheat oven to 180C
  • Line a 23 x 13 cm loaf tin with baking paper
  • In a medium bowl, mash the bananas
  • Stir in the sugar
  • Add the mayonnaise, flour and a pinch of sea salt and lightly mix, just until combined
  • Using a spatula, scrape the mixture into the tin and bake until a skewer inserted into the center comes out clean, 45 minutes
  • Let cool in the pan for 10 minutes, then turn onto a rack
  • Enjoy it warm straight away or lightly grilled

Recipe Notes

Optional: Before baking sprinkle with ground spices, eg. cinnamon and nutmeg. In addition to adding flavour, spices also add health benefits too.
