Citrus Pancakes
Serves 4 pancakes
Ingredients
- 1 cup GF self-raising flour
- 1 free range egg
- 1 cup milk
- 2 mandarins grate the zest and cut the segments
Instructions
- Combine flour, egg and a pinch of sea salt.
- Beat gradually, adding milk until thick and smooth.
- Add mandarin zest and segments.
- Heat non-stick frying pan.
- Pour desired quantity into frying pan, cook until bubbling on top and then flip.
Recipe Notes
Optional: Serve with pure maple syrup, lemon juice and sugar, honey or stewed fruits.
Tip: another tasty topping is the citrus infused maple syrup. Add some orange peel to a bowl of pure maple syrup and allow to sit for an hour before using.
