Masala Meatloaf
Serves 8 people
Ingredients
- 1 kg pork and veal mince
- 1 onion finely diced
- 2 tablespoons masala paste
- 2 eggs beaten
Instructions
- Preheat oven 180ºC.
- Line a loaf tin with baking paper.
- In a large bowl, mix all the ingredients together with cracked pepper; set aside for 10 minutes.
- Meanwhile, brush the base and sides where mince will sit with a smattering of masala paste; this results in a nice, dark colour when baked.
- Spoon the mixture into the tin.
- Bake for 50 minutes or until lightly browned on top.

Optional:
Meatloaf is a fabulous veggie smuggler; I added chopped mint and red capsicum, grated zucchini and carrot when I made this (simply because they were what
I had in the fridge).
Serve with a Homemade Raita: Place ¼ cup chopped cucumber into a bowl with
½ cup natural yoghurt and 1 teaspoon fresh chopped mint. Season and stir to combine. Refrigerate until ready to serve with this yummy Meatloaf.
