Red Velvet Truffles

1 1/4 cups red velvet cake mix just the powder

1 cup (120g) icing sugar

4 tablespoons cream cheese softened

150 grams white chocolate

Red edible glitter
Place the cake mix, icing sugar, and cream cheese in a large mixing bowl and, using a hand held mixer, combine until the dough forms a large, evocative red ball.
Place in the fridge for 1 hour.
Powder your hands with icing sugar and manipulate into tablespoon sized balls.
Into a bowl, break the white chocolate. Melt in the microwave in 30-second increments, stirring relentlessly until silky smooth.
Plunge the balls into the patiently waiting melted chocolate, allow the excess to drop off... slowly, slowly, slowly.
Place the balls gently onto a paper lined baking tray.
Dust ever to lightly, just the top of the ivory mound, with glitter.
