Coconut Pikelets

Serves 14 pikelets


  • 400ml coconut milk
  • 2 cups self raising flour
  • 1 tablespoon honey or agave nectar
  • 2 eggs


  • Combine all ingredients with ½cup (125ml) water, and gently whisk until smooth.
  • Pour a small amount of mixture into a hot, nonstick frying pan and cook over moderate heat until bubbles appear.
  • Flip and cook until lightly browned.
  • Repeat in batches until all the batter is used.

Recipe Notes

Optional: Serve drizzled with delicious Caramel Sauce, the combination of coconut and caramel just screams ‘DELICIOSO!’. Add grated apple and cinnamon to the batter before cooking.
