Ginger & Sweet Potato Soup
Serves 4 servings
Ingredients
- 2cm piece ginger peeled and finely chopped
- 1kg sweet potato peeled and cut into chunks
- 1 tablespoon brown sugar
- 1 litre Vegetable stock
Instructions
- Place the ingredients in the slow cooker.
- Cover and cook on LOW for 4 hours or high for 2 hours.
- Cool for 10 minutes.
- Using a stick blender, blend until smooth.
- Season to taste before serving.
