Green and Gold Fritters

Serves 8 fritters


  • 1 cup self-raising flour
  • 1 cup milk
  • 1 free range egg beaten
  • 1/2 cup frozen peas and corn


  • Heat a small non-stick frying pan to medium heat.
  • Lightly whisk flour, milk and egg together until there are no lumps.
  • Stir the peas and corn and a little seasoning through the batter.
  • Using a tablespoon, form flat, golf ball sized circles in the pan.
  • Once they begin to bubble evenly, flip and cook the other side until lightly golden.
