Green and Gold Fritters
Serves 8 fritters
Ingredients
- 1 cup self-raising flour
- 1 cup milk
- 1 free range egg beaten
- 1/2 cup frozen peas and corn
Instructions
- Heat a small non-stick frying pan to medium heat.
- Lightly whisk flour, milk and egg together until there are no lumps.
- Stir the peas and corn and a little seasoning through the batter.
- Using a tablespoon, form flat, golf ball sized circles in the pan.
- Once they begin to bubble evenly, flip and cook the other side until lightly golden.
