Key Lime Pie

Serves 8 serves


  • 4 large eggs
  • 400g can condensed milk
  • 4 limes, juiced & 2 teaspoons lime zest
  • 1 ready made pie base


  • Preheat the oven to 180C.
  • In a bowl, with an electric mixer, beat the egg yolk until they are thick and turn pale yellow.
  • Turn the mixer off and stir in the condensed milk.
  • Turn the speed to low and mix in half the lime juice.
  • Once the juice is incorporated, add the other half of the juice and the lime juice and the lime zest and mix to combine.
  • Pour the mixture into the pie base and bake until set, about 15 minutes.

Recipe Notes

Optional: Serve with whipped cream or lightly dusted with icing sugar.
