Key Lime Pie
Serves 8 serves
Ingredients
- 4 large eggs
- 400g can condensed milk
- 4 limes, juiced & 2 teaspoons lime zest
- 1 ready made pie base
Instructions
- Preheat the oven to 180C.
- In a bowl, with an electric mixer, beat the egg yolk until they are thick and turn pale yellow.
- Turn the mixer off and stir in the condensed milk.
- Turn the speed to low and mix in half the lime juice.
- Once the juice is incorporated, add the other half of the juice and the lime juice and the lime zest and mix to combine.
- Pour the mixture into the pie base and bake until set, about 15 minutes.
Recipe Notes
Optional: Serve with whipped cream or lightly dusted with icing sugar.
