Picnic Loaf

Picnic Loaf


  • 1 ciabatta loaf
  • 400g antipasto chopped and drained
  • 8 bocconcini balls sliced
  • 85g sliced ham, pastrami, pepperoni or salami


  • Split the ciabatta loaf lengthwise and scoop out the bread.
  • Fill one side with the antipasto
  • Fill the other side with bocconcini.
  • Follow with your choice of ham, pepperoni, or salami.
  • Place the halves back together, wrap tightly in baking paper, and secure with masking tape or kitchen twine.
  • Pop in the fridge with a weight on top (a casserole dish would do) and leave for 2 hours.
  • To serve, simply unwrap and cut crosswise into slices.
