Strawberry Chia Pudding
- 400ml coconut milk
- 250g fresh strawberries washed and hulled
- 4 tablespoons black chia seeds
- 2 teaspoons stevia
- Puree coconut milk and strawberries ina blender.
- Pour into a bowl. Add chia seeds and stevia.
- Whisk well to separate the seeds and combine.
- Cover with cling wrap and refrigerate until set, at least 3 to 4 hours.
- Stir a couple of times within the first hour to break up any clumps of chia seeds and again just before you are ready to serve.
