Thai Sweetcorn & Zucchini Soup
Serves 2 serves
Ingredients
- 2 medium zucchini diced
- 1 200g corn cob kernels removed
- 1 tablespoon green curry paste
- 3 cups organic chicken stock
Instructions
- Place all the ingredients in a medium saucepan. Bring to a gentle boil, reduce the heat and simmer for 20 minutes.
- Blend, season and serve.
Recipe Notes
Optional: Serve sprinkled with 10 fresh basil leaves for just 1 lonely, little calorie, and one fresh red chilli, deseeded and finely sliced, for just 5 calories.
