2 Ingredient Chocolate Bread

Serves 8 serves


  • 4 cups full-fat chocolate ice cream
  • 3 cups self-raising flour


  • Preheat oven to 160C.
  • Lie a 23 x 13cm loaf tin with baking paper and set aside.
  • Place softened ice cream in a bowl.
  • Add flour and mix until just combined; do not over-beat or the dough will become tough when cooked.
  • Spoon the mixture into the tin and distribute evenly.
  • Bake for 50 to 60 minutes or until a skewer pushed into the centre removes clean.

Recipe Notes

Optional: Top with a deliciously simple Chocolate Buttercream: Mix together 1/2 cup softened butter, 1 1/2 cups pure icing sugar, 2 tablespoons cacao powder and 2 tablespoons milk (or cream). This gorgeous icing can be piped or spread over the bread, scattered with chopped marshmallows.
