Banana Muffins

Serves 12 muffins


  • 2 large ripe bananas
  • 2 tsp. Natvia
  • 2 tbsp. flaxseed meal
  • cups almond meal


  • Preheat oven to 160ºC.
  • Line 12 mini-muffin cups with papers.
  • In a medium bowl, stir together the mashed banana and flaxseed meal.
  • Stand for 5 minutes.
  • Add the almond meal and Natvia, then season with sea salt.
  • Stir until completely combined.
  • Using a tablespoon, divide batter evenly between the prepared muffin cups.
  • Bake for 20 minutes or until the tops appear dry and muffins are a light golden brown.
  • Cool for 5 minutes in the muffin tray.
