Banana Muffins
Serves 12 muffins
Ingredients
- 2 large ripe bananas
- 2 tsp. Natvia
- 2 tbsp. flaxseed meal
- 1½ cups almond meal
Instructions
- Preheat oven to 160ºC.
- Line 12 mini-muffin cups with papers.
- In a medium bowl, stir together the mashed banana and flaxseed meal.
- Stand for 5 minutes.
- Add the almond meal and Natvia, then season with sea salt.
- Stir until completely combined.
- Using a tablespoon, divide batter evenly between the prepared muffin cups.
- Bake for 20 minutes or until the tops appear dry and muffins are a light golden brown.
- Cool for 5 minutes in the muffin tray.
