Pancakes
Serves 4 pancakes
Ingredients
- 1 cup self-raising flour
- 1 teaspoon cinnamon sugar
- 1 cup buttermilk
- 1 egg
Instructions
- Combine together the flour and cinnamon sugar with a good pinch of sea salt.
- Make a well in the centre and add the milk and egg.
- Lightly whisk everything together until smooth.
- Set aside and rest, 5 minutes.
- Heat a non-stick frying pan over medium heat (you may need to wipe over with a little butter if the pan is well loved).
- Pour ¼ cup of batter into the pan to gently form a round shape.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
Recipe Notes
Optional: Serve with honey, bacon, fresh fruit, ice cream or frozen yoghurt, or (my personal favourite) strawberries and maple syrup.
