Pork & Apple Bake
Serves 4 portions
Ingredients
- 175 grams pork tenderloin or boneless loin chop
- 1 potato
- 1 parsnip
- 1/4 onion
- 1 Granny Smith apple
- 1 cup water
- 2 fresh sage leaves
Instructions
- Preheat the oven to 180°C.
- Rinse the pork and chop into small pieces.
- Peel and chop the potato, parsnip and onion.
- Peel, core and chop the apple.
- Place in a casserole dish with the water and sage.
- Cover and bake for 1 1/4 hours or until nice and tender.
- Blend or mash to the required consistency.

The flavour of the apple brings out the best of the meat.
